Description
The technology of boiled condensed milk products with a reduced content of disaccharides, which contain up to 80% of whey. New boiled condensed dairy products, depending on the depth of hydrolysis of milk sugar in whey, contain 0.96-5.20% lactose, 11.52-17.95% glucose, 2.64-8.47% galactose, which reduces the sucrose content in the finished product up to 17.0–26.0% and to produce canned condensed milk with a taste comparable in sweetness to traditional condensed milk. At the same time, a decrease in the content of disaccharides in condensed canned milk based on hydrolyzed milk whey, as well as a combination of special technological methods and an increased mass fraction of monosaccharides in them ensure high quality and safety indicators of finished products.
The possibility of expanding the range of new types of canned milk with a low cost will ensure their competitiveness. In 2018, 23,730 kg of new products were produced for sale on the territory of the Republic of Belarus and the EurAsEC countries.

The economic effect of the new technology is achieved through the use of a by-product of milk processing - whey and less sugar, which makes it possible to reduce costs compared to traditional technology.
