Description
Recent innovations in the design of steam-dynamic thermosyphons make it possible to create heat pipes and thermosyphons for heating and cooling air, soil and pavement, for melting snow and ice on the roofs of buildings, parking lots, as heat pump heat exchangers, heat and cold accumulators and other applications.

A.V.Luikov Heat and Mass Transfer Institute of the NAS of Belarus has developed a system for heating oil in a fryer based on heat pipes (steam-dynamic thermosiphons - SDT), in which a closed steam-dynamic evaporative-condensation heat transfer cycle is implemented. There is no intermediate coolant in the system; heating of vegetable oil is carried out directly with the help of SDT.

In the developed system, the thermosyphon evaporators with the block of electric heaters are placed outside the oven, sunflower oil is heated by SDT condensers located in the frying bath in direct contact with the oil. Capacitor cases are made of bimetallic: the inner surface is copper, the outer surface is made of "food grade" stainless steel.

The use of heat pipes made it possible to minimize the concentration of carcinogens in sunflower oil by optimizing the frying temperature. Heat pipe heaters have reduced the overall power consumption of the roaster by 20-25%.

The heating system makes it possible to increase the efficiency of thermal control along the length of the heat pipe under conditions of variable heat load, which ensures the constancy of the oil temperature during the frying process and the absence of thermal decomposition products due to local overheating.

Advantages and Innovations
The developed system has a number of advantages:
- convenient weight and size characteristics;
- a significant reduction in electricity consumption ( before 30%);
- the risk of failure of the electric heater due to overheating is prevented;
- there is a possibility of fine adjustment of the heat load of the heater, vegetable oil temperature;
- high degree of surface isothermality.
