Summary
The Institute of Meat and Dairy Industry offers food producers a new technology for the production of cooked-smoked sausages to improve the quality and safety of cooked-smoked sausages and expand their product range under a commercial agreement with technical assistance and/or a licensing agreement. The Institute is looking for partners to conclude a research cooperation agreement.
Description
The use of a technology for producing cooked-smoked sausages ensures the production of sausages in accordance with standardized quality and safety indicators established within the framework of the legislation of the Eurasian Economic (Customs) Union, characterized by high consumer characteristics.
This technology establishes the technological regimes, procedures, and operations for producing cooked-smoked sausages and enables the production of a wide range of cooked-smoked sausages of various grades and their compliance with the requirements established in STB 2581-2020 "Cooked-smoked Sausage Products. General Specifications."
Scope: Meat processing industry of the Republic of Belarus.
The foreign trade market for sausages is highly competitive, and it is the high quality of meat products that determines the export potential of exporting countries. Belarusian sausages have long enjoyed steady demand in the consumer markets of the Russian Federation and other EAEU countries.
Contracts may be entered into for scientific and technical assistance in developing and implementing technologies and recipes for the production of cooked-smoked sausages.

Advantages and Innovations
The technology for producing cooked-smoked sausages reflects the technological features and optimal production parameters for sausages, depending on the raw materials and their preparation, food additives, casings, etc., thereby meeting the requirements of STB 2581-2020.
The developed technology for producing cooked-smoked sausages ensures the production of safe products, as process control is exercised at all stages of production. Furthermore, safety requirements established by the legislation of the Republic of Belarus are observed. Finished product safety control is carried out in accordance with STB 2581-2020, by fulfilling the requirements of TR CU 034/2013 "On the Safety of Meat and Meat Products," TR CU 021/2011 "On Food Safety," and the legislation of the Republic of Belarus.
The technology provides two process options for producing cooked-smoked sausages: classical (traditional) technology and modern (accelerated) technology.
Modern technology allows for the production of cooked-smoked sausages with a shorter production cycle. It was developed taking into account the current technical equipment of enterprises, the use of new types of equipment, modern sausage casings and food additives, and changing consumer taste preferences.

The Republican Unitary Scientific and Production Subsidiary Enterprise "Institute of the Meat and Dairy Industry" of the Republican Unitary Enterprise "Scientific and Practical Center for Foodstuffs of the National Academy of Sciences of Belarus" is a leading enterprise developing technologies and new products for the meat and dairy industries.
