Description
A range of instant dry mixes for the preparation of milk drinks, including those with flavoring components, and a manufacturing technology have been developed.

In terms of quality and safety, instant dry milk mixes comply with the requirements established by Technical Regulatory Legal Acts (TRLA) SanPiN No. 52 of June 21, 2013, GN No. 52 of June 21, 2013, and TR CU 033/2013.

Scope: Instant dry milk mixes are intended for sale, direct consumption for the preparation of hot drinks (after preliminary preparation), and export.

Vending machines are widely used in developed countries such as Japan, the USA, and the UK, as well as in our country. They save on retail space and are easy to use. The Republic of Belarus imports approximately 200 tons of dry mixes for vending machines. The country's main trading partners for vending machines and raw materials (dry mixes for coffee, tea, cocoa, and other beverages) are Italy and Germany.

Contracts may be concluded with processing plants to refine the technology for producing canned milk products according to the developed technical regulations and technical documentation.

Advantages and Innovations
Using traditional instant milk powder in coffee machines can lead to problems such as increased hygroscopicity, resulting in clumping and sticking in closed systems with high humidity, and uneven or excessive dosing.

Using the developed instant powder mixes eliminates this drawback, thanks to their increased wettability and rapid dissolution. Another important consumer quality is the good foaming of the finished hot beverage when using instant powder mixes, achieved through a carefully selected component composition.

The developed mixes are based on natural milk components without the addition of vegetable oils (imported mixes primarily contain milk protein from milk components, and the fat phase is hydrogenated vegetable fat, which necessitates the use of a large number of food additives, emulsifiers, stabilizers, anti-caking agents, etc.).

The product contains over 70% milk components. High solubility (0.2–0.3 cm³) of wet sediment) and flowability are achieved by introducing agglomeration into the process. Wettability of the mixtures, correlated with the wettability of instant milk, is ensured by spraying the agglomeration liquid during the agglomeration process.

The economic impact of this development is achieved by expanding the range of high-quality domestically produced dairy products.

The Republican Unitary Scientific and Production Subsidiary Enterprise "Institute of the Meat and Dairy Industry" of the Republican Unitary Enterprise "Scientific and Practical Center for Foodstuffs of the National Academy of Sciences of Belarus" is a leading enterprise developing technologies and new products for the meat and dairy industries.
